Perfume: Is it a childhood memory that surfaces? A touch of grenadine, blackberries and redcurrants to enchant the senses. Flavour: The Grenache Noir, Pinot Noir and Cinsault blend offers a fruity and complex nose, with notes of minerals and flint on the palate. A nice fresh and gourmet profile.
Light, delicate and yet tasty style that is perfect with vegetarian Mediterranean dishes, white meat or poultry and various snacks and charcuterie.
- climate
-
Mediterranean climate with hot to very hot summers and mild winters. Due to its proximity to several mountain ridges, the risk of thunderstorms is high. This is therefore the main source of rain. The cold northern Mistral can have a cooling effect in the area.
- soil
-
In the large area some 25 km west of Nîmes, the soil is mainly sandstone mixed with gravel and calcareous clay.
- vinification
-
Low yield of only 15hl/ha. 70% Grenache Noir and 20% Pinot Noir and 10% Cinsault. Manual harvest in small crates, optimal ripening and short maceration complement the ecological vinification culture. Vinification of the different varieties is done separately.
