Perfume: The attack is floral with a hint of white blossom. This is followed by more exotic fruit like peach and mango. Taste: On the palate, it is nicely dry and sunny with nicely balanced notes of exotic fruits and a refreshing hint of lime. Lovely tight and long finish.
With its fresh, sleek and aromatic character, it is delicious with raw fish, shellfish, Asian fish preparations, salads with poultry and soft (goat) cheese.
- climate
-
Mediterranean climate with hot to very hot summers and mild winters. Due to its proximity to several mountain ridges, the risk of thunderstorms is high. This is therefore the main source of rain. The cold northern Mistral can have a cooling effect in the area.
- soil
-
In the large area some 25 km west of Nîmes, the soil is mainly sandstone mixed with gravel and calcareous clay.
- vinification
-
Low yield of just 15hl/ha. 70% Grenache Blanc and 30% Viognier. Fertilisers and chemical treatments are eschewed and have been replaced by natural processes. At optimum ripeness the grapes are picked and selected manually. Classic fermentation of both varieties is already blended. Bottling follows several months of rest on inox.
